The grapes grow in some of the best Champagne terroirs: Mesnil-sur-Oger, Mareuil, Bisseuil, Mailly and Rilly-la-Montagne. The wine has its own and unique production process that was developed in the 1930’s and has been used ever since. Maison Besserat de Bellefon uses less liqueur de tirage, which gives a lighter and less aggressive foam. The foam is creamy and persistent. Extra Brut has not undergone the malolactic fermentation.
